Great as a side dish for BBQ.
2 bunches collards-stemmed and choped
2 carrots sliced
1 onion diced
1 tbs olive oil
2 cans chicken broth
1 smoked ham shank
2 tbs balsamic vinegar
salt and pepper to taste
in a lg sauce pan heat olive oil
add onion, carrots cook 2 minutes
add collards cook down
add ham shank and chicken broth bring to boil.
lower heat to simmer.
add balsamic vinegar-simmer 2-3 hours
salt and pepper to taste...Enjoy
They have a stronger odor than kale or spinach and are not bitter but they taste best when well seasoned. I like mine spicey. I put cooked seasoned collards in my omlets and fold them into my mashed potatoes. I eat collards at least once a week. They have a lot of calcium in them and keep you regular. They always taste good with a little vinegar on them.
