my father would make this large antipasto salad whenever we had a big family gathering. use the ingredients of your choice.
1-2 heads romaine lettuce cut up
1 lg red onion sliced thin
pepperocini peppers cut up-1 jar
sliced black olives
tomatoes sliced and halfed
1/2 lb geneoa salami sliced thin & cut into strips.
1/2 lb mortadella sliced thin & cut into strips.
1/2 lb provolone cheese slived thin & cut into strips.
1/2 lb prosciutto sliced thin & cut into pieces.
2 cans anchovies packed in oil. (if you dont like anchovies, fear not, we are serving them on the side, but we want the anchovie oil).
olive oil
red wine vinegar
on a large platter, lay a bed of romaine lettuce. sprinkle all the ingredients listed above except the anchovies.
conitnue to layer beginning with the romaine. over and over.
your platter should be about 6-8 inches high..a thing of beauty.
drizzle the anchovie oil over the salad,
then some olive oil and red wine vinegar.
serve with garlic bread.
this was the starters. then we had the meat, pasta and dessert.
